Teriyaki Beef Lettuce Wraps

If you’re looking for a dinner that’s quick, healthy, and better than takeout, these teriyaki beef lettucewraps are it! They are naturally gluten free and dairy free, loaded with flavor and come together in under 30 minutes.  The savory-sweet teriyaki beef paired with crisp lettuce cups makes for a meal that feels fresh and satisfying without the heaviness of traditional takeout.

One of the best parts of this recipe is how incredibly easy it is.  I used Kevin’s brand teriyaki sauce, which is gluten-free and made with clean ingredients, but feel free to use any teriyaki sauce you love.  Just brown up some ground beef, toss in some veggies, top with the sauce and spoon it into lettuce leaves–that simple! Because it’s high in protein and fiber, this dish will keep you full and energized while still being light and refreshing.

These lettuce wraps are also a total family favorite.  My kids love building their own wraps, and it’s such a fun way to get everyone to the table. They make a perfect weeknight dinner, but they’re also great for meal prep since the filling reheats beautifully the next day.  You can even serve the teriyaki beef over rice, cauliflower rice or quinoa if you want to switch things up.  However you enjoy them, these lettuce wraps are proof that healthy, gluten-free meals can be just as crave-worthy as your favorite takeout!

Teriyaki Beef Lettuce Wraps

These teriyaki beef lettuce wraps are a fresh, flavorful, and healthy dinner idea that comes together in no time. Made with tender ground beef coated in a savory-sweet teriyaki sauce and served in crisp lettuce cups, they are naturally gluten free, dairy free and perfect for busy weeknights. A family friendly meal that's just as great for meal prep as it is for dinner tonight!

Ingredients
  

  • 1 red onion
  • 3 lbs ground beef
  • 2 bags HEB broccoli slaw you can use any store bought coleslaw type mix of veggies
  • 1 bag Kevin's Teriyaki sauce I love Kevin's but you can use any teriyaki you like
  • Lettuce cups

Method
 

  1. Place a large wok or pan on your stove and set it to medium/high heat. Add in the ground beef and red onion.
  2. Once the ground beef is mostly cooked add in the broccoli slaw and let cook for 5-7 minutes
  3. Add in the packet of Kevin's teriyaki sauce and let cook for another 5-7 minutes
  4. Scoop the contents into lettuce cups to serve and enjoy!
