- Peel and dice the sweet potatoes and place them on a baking sheet. Put them in the oven at 400 for about 30 minutes
- Brown your ground beef on the stove top over medium heat. Drain the excess grease then season with the taco seasoning mix. If you think your meat looks a little dry add in around 2 tbsp of chicken or beef broth.
- Heat your beans over the stove top. Add in 1 tsp of the taco seasoning blend for extra flavor.
- Build your taco bowl by adding all the ingredients to the bowl! Sweet potatoes, beef and beans then top it with your shredded lettuce, sweet corn, pico, avocado and your favorite salsa.
