Deconstructed Chicken Kebabs

Deconstructed Chicken Kebabs

This gluten free dairy free meal brings you all the flavor of chicken kebabs without the hassle of skewering!

Ingredients
  

  • 12 oz Sliced mushrooms
  • 2 medium zucchini
  • 2 medium yellow squash
  • 1 small red onion
  • 1 pack organic beef sausage The Kiolbassa smoked meats brand is our favorite
  • 3 lbs chicken
  • 2 tbsp avocado oil
  • 2 tbsp red wine vinegar
  • 2 tbsp dijon mustard
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp cumin

Method
 

  1. Dice the zucchini, yellow squash, red onion, chicken and sausage.
  2. Add all ingredients to a 9x13 baking dish (if using my measurements you will need 2 baking dishes)
  3. Add the oil, vinegar, mustard and all seasonings
  4. Cover and place in the fridge to marinate for at least 20 minutes. I like to make this meal in the morning and let it marinate all day then cook it when I get home from work!
  5. Place the baking dishes in the oven at 400℉ for 30 minutes and enjoy!

Notes

This recipe is very versatile! You can use any veggies you enjoy on your kebabs! Bell peppers are a great option if you are not sensitive to nightshades!
