Easy Crockpot Pot Roast (gluten free, dairy free, nightshade free)

There is nothing better than coming home to a warm, hearty dinner that’s been cooking itself all day.  This gluten free, dairy free, and nightshade free crockpot pot roast is the ultimate easy meal–you simply set it, forget it, and let the slow cooker do all the work.  The result is a tender, flavorful roast with perfectly cooked veggies that feels like comfort food in a bowl.

One of the best parts?  The leftovers taste even better the next day, making this recipe ideal for meal prep or busy weeks when you want something nourishing without extra effort.  My whole family devoured it–even the picky toddlers asked for seconds, which is always a huge win!

This pot roast is naturally nightshade free, but if potatoes aren’t an issue for you, they can easily be added in for that classic touch.  Packed with protein and wholesome ingredients, it’s the perfect cozy meal as we head into the fall.  Whether you are serving it for a Sunday family dinner or just need an effortless weeknight meal, this recipe checks all the boxes.

 

Crockpot Pot Roast

Slow cooked comfort food! This gluten free, dairy free, and nightshade free crockpot pot roast is hearty, nourishing, and family approved. The perfect set-it-and-forget-it dinner that makes your house smell amazing while it cooks.

Ingredients
  

  • 2-4 lbs Grass fed chuck roast
  • 1 diced yellow onion
  • 5 stalks diced celery
  • 6 large carrots sliced
  • 1 tbsp thyme
  • 1 tbsp salt
  • 1 tsp ground black pepper
  • 2 tbsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 cups bone broth can use chicken or beef

Equipment

  • Crockpot

Method
 

  1. Add all the ingredients to a crock pot. Mix together. Cover and cook on high for 6 hours or low for 8-10 hours.
  2. Once the meat is fully cooked it will be fork tender and you can remove it from the crock pot and shred it with two forks. If it does not shred easily it may need more time.
  3. Once the meat is shredded add it back into the crockpot to soak in the liquid. Serve and enjoy!
