Crockpot Pot Roast

Slow cooked comfort food! This gluten free, dairy free, and nightshade free crockpot pot roast is hearty, nourishing, and family approved. The perfect set-it-and-forget-it dinner that makes your house smell amazing while it cooks.

Ingredients
  

  • 2-4 lbs Grass fed chuck roast
  • 1 diced yellow onion
  • 5 stalks diced celery
  • 6 large carrots sliced
  • 1 tbsp thyme
  • 1 tbsp salt
  • 1 tsp ground black pepper
  • 2 tbsp dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 cups bone broth can use chicken or beef

  • Crockpot

Method
 

  1. Add all the ingredients to a crock pot. Mix together. Cover and cook on high for 6 hours or low for 8-10 hours.
  2. Once the meat is fully cooked it will be fork tender and you can remove it from the crock pot and shred it with two forks. If it does not shred easily it may need more time.
  3. Once the meat is shredded add it back into the crockpot to soak in the liquid. Serve and enjoy!
