Chicken Bacon Ranch Bowls

These bowls also make the perfect meal prep option.  Prepare this meal once and you will have easy lunches or dinners ready to go all week long.  They reheat beautifully, can be served warm or cold, and are incredibly versatile.  Whether you are feeding the whole family or packing yourself a satisfying lunch, chicken bacon ranch bowls are a delicious, no-fuss recipe you’ll come back to again and again.

Chicken Bacon Ranch Bowls

These chicken bacon ranch bowls are always a hit at our house!

Ingredients
  

For the chicken
  • 3 lbs chicken
  • 1/2 cup pickle juice
  • 1 tsp salt
  • 1 tsp garlic powder
Everything Else
  • 4 sweet potatoes
  • 2 bags frozen broccoli
  • 1 tsp salt
  • 1 bag spring mix
  • 2 tbsp primal kitchen ranch
  • 2 packs bacon we like applegate

Method
 

  1. To start place the chicken in a crock pot and add the pickle juice, salt and garlic powder. Let the chicken cook on high for 4 hours or on low for 8 hours.
  2. When your chicken is almost done, peel and dice the sweet potato and add it to a sheet pan. On a separate pan add the frozen broccoli. Season each with salt.
  3. Place the two sheet pans into the oven at 400℉ for about 30 minutes or until the sweet potatoes are fork tender.
  4. Place your bacon on a sheet pan and add it to the oven to cook for about 20 minutes or until it is extra crispy.
  5. Remove the bacon from the oven and transfer it to a paper towel lined plate. Allow to cool then using a towel crumble the bacon into bits.
  6. Build your bowl by adding spring mix, sweet potatoes, broccoli, chicken, bacon bits, and top it with primal kitchen ranch.

Notes

You can prepare your chicken in any way you prefer for this meal.  It could be grilled, baked, shredded, air fried...you name it! It will all taste good! My preference is shredded though!
