Turkey Burgers

These turkey burgers are a go-to quick weeknight dinner. They are juicy, flavorful and so easy! They are high in protein plus gluten and dairy free making them a huge WIN in our house!

Ingredients
  

For the Turkey Burgers
  • 2 lbs ground turkey
  • 2 eggs
  • 1 tbsp dijon mustard
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp parsley
  • 1/4 cup almond flour or gluten free all purpose flour
  • 2 tbsp avocado oil (spray is easiest)
  • 1 avocado for topping (optional)
Sides
  • 2 large zucchini
  • 2 large yellow squash
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp avocado oil

Method
 

  1. Add all ingredients for the turkey burgers (except the oil) to a large bowl and mix together. Separate into 8 even patties.
  2. Heat a cast iron skillet over medium heat with avocado oil sprayed on top.
  3. Spray the turkey burgers with avocado oil on both sides to help them retain moisture during the cooking process.
  4. Add the turkey burgers to the hot cast iron and cook for about 5 minutes per side or until they reach an internal temperature of 165℉.
  5. While the turkey burgers are cooking, slice the zucchini and squash and sauté in a pan with avocado oil, salt and garlic powder over medium heat, stirring occasionally.
  6. Serve the turkey burger topped with mashed avocado. Add the side of summer squashes and a fruit salad! Enjoy!
