Add all ingredients for the turkey burgers (except the oil) to a large bowl and mix together. Separate into 8 even patties.
Heat a cast iron skillet over medium heat with avocado oil sprayed on top.
Spray the turkey burgers with avocado oil on both sides to help them retain moisture during the cooking process.
Add the turkey burgers to the hot cast iron and cook for about 5 minutes per side or until they reach an internal temperature of 165℉.
While the turkey burgers are cooking, slice the zucchini and squash and sauté in a pan with avocado oil, salt and garlic powder over medium heat, stirring occasionally.
Serve the turkey burger topped with mashed avocado. Add the side of summer squashes and a fruit salad! Enjoy!
