Pumpkin Protein Balls

Make these easy no-bake pumpkin protein balls for a healthy fall snack! Gluten free, dairy free, and vegan, they are packed with oats, protein powder, pumpkin, and nut butter for a tasty, energizing bite!

Ingredients
  

  • 1 cup oats
  • 4 scoops Vegan protein powder I like Earthchimp organic
  • 1/2 cup Nut butter I like Nuttzo but you can use any nut butter or blend
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/2 tsp cinnamon
  • 1 tsp vanilla

Method
 

  1. Combine all ingredients in a large bowl and mix well
  2. Roll into balls and chill in the fridge for 30 minutes or more then enjoy!
