Greek Chicken Wraps (Gluten-Free & Dairy Free)

These easy greek chicken wraps are made with tender crockpot chicken, hummus, fresh veggies, and gluten-free wraps. A healthy, family-friendly dinner or meal prep idea that's naturally gluten-free and dairy-free.

Ingredients
  

For the Chicken
  • 3 lbs Chicken breast
  • 6 tbsp avocado oil can also use olive oil
  • 4 tbsp red wine vinegar
  • 2 tsp dijon mustard
  • 3 cloves minced garlic
  • 2 tsp oregano
  • 1 tsp cumin
  • 2 tsp salt
  • 1 tsp ground pepper
For the Wraps
  • 1 pack Coconut Wraps We love the thrive market brand for these
  • spinach
  • matchstick carrots
  • black olives
  • hummus
  • mustard

Method
 

  1. Add all of the chicken ingredients to a crockpot with the seasonings and let cook on low for 8 hours
  2. When the chicken is done, shred the chicken
  3. Build the wrap by spreading hummus on a coconut wrap then top with spinach, chicken, carrots, black olives and mustard
